Hands down, this is our all time favourite soup!
This soup is good on your health and it's super easy as well as quick to cook up while being on the road whether it's on camping grounds, in your camper van, hostels or wherever you are as long as you have basic cooking facilities. AND you'll have dinner for two days or you can eat it for lunch the day after so have a container ready for leftovers.
Below you'll find a recipe of our own adjusted red lentil soup and we hope you'll enjoy it!
5 stalks celery
2 medium/large green onions
4 garlic cloves
1L vegetable broth
350g uncooked red lentils
2 cans crushed tomatoes
1 can coconut milk
2 tbsp soy sauce or tamari
2-3 tbsp curry powder
1-2 tbsp cumin
Salt and pepper
How To Make:
Cut all the vegetables into smaller pieces as you like. First fry the onions, garlic, ginger and chili in coconut oil.
Add the rest of the vegetables and fry for about 5 minutes. Add in the crushed tomatoes, coconut milk and vegetable bouillon/stock.
Stir for a minute and then add the spices and the soy sauce/tamari.
Lastly add in the red lentils and give it a stir. Put a lit on for 20 minutes and serve with cashew nuts on top.
