Red Curry Noodles

Delicious, asian-inspired red curry with noodles. Super easy and fast meal to prepare and cook!
Ingredients:
1/2 pack noodles
1/2 broccoli
1 capsicum
4 stalks pak choi
1 can bamboo shoots
2 onions
3 garlic cloves
1/5 red chili
10g ginger
1 can coconut milk
100ml vegetable stock
3 tbsp red curry paste
Tiny bit of soy sauce or tamari sauce
Topping:
Cashew nuts
How To Make:
Cut all the veggies into shapes and sizes of own preference. First add the red curry paste to a wok pan, then add in the ginger, garlic, chili and onions and fry for a few minutes. Add in the coconut milk, then the veggies (except from bamboo shoots) and stir untill well mixed. Add in the vegetable stock and mix again. Add in the noodles - if you want more "soup" add in some more vegetable stock. Add in the bamboo shoots as well as the soy sauce and let it simmer for 5 minutes.
Serve with cashew nuts on top and enjoy!
